Spice Cake Recipe.


Okay since we've been up to our elbows in apples and I just happen to have a 3/4 full jar of apple sauce to get used up, we decided to make a cake. We looked through all our favorite recipes and just couldn't find anything that caught our eye, that is until I pulled out the Spice Cake recipe that was shared by a family friend. We're having meatloaf, macaroni and cheese( homemade) and green beans for supper and Spice Cake topped with warm applesauce and cinnamon -sugar sounds lovely.

Spice Cake ( this recipe came from a friend, it dates back to the 1930's Depression era)

1-1/2 c. sugar

2/3 c. lard

1-1/2 c. sour milk, or buttermilk

2 eggs

1 tsp. soda

1 tsp cinnamon( I add a tad more)

1/2 tsp cloves

1 tsp. nutmeg

2-1/2 c. flour

1 c. raisins( soaked in hot water to soften)

Cream sugar and lard; add sugar and egg and beat. Dissolve soda in sour milk and mix into mixture. Sift four and spices in, mixing until moist, drain raisins, add and blend in well.

Bake in a 9x13 pan at 350F for 30min. or until toothpick in center comes out clean.

This cake doesn't need a frosting, we simply shake a little powdered sugar on or top with warm applesauce and cinnamon and sugar.

This cake keeps very well.
