homemade potato chips are, they'd never by store bought again!
Since we have plenty of potatoes in the root cellar( 400+ lbs) and thinking ahead to the best ways to use them, today we made several batches of homemade potato chips, move over Lays and Ruffles these are the real thing made with skins on and fried in extra virgin olive oil. The first few batches( pictured below) we got a bit browner than we'd intended, the rest of the batches looked more like home style potato chips. We lightly salted them with sea salt and enjoyed them with mild Italian sausage, sauerkraut and green beans for our supper.

I was craving homemade chips a couple of weeks ago, and ended up making them and french fries. Love your page, my daughter wants to know what your dogs are. She said one is an Australian Shepherd and the other (blk.+white) I said was a border Collie. She said I am wrong!

Welcome and thank you for your comment. You Dd is absolutely right our tri red " Casino" is a registered Aussie and tell her you are correct too. The block and white, " Tuffy" is a Border Collie crossed with a Healer. He looks like a border collie but has the temperment of a healer and he is VERY protective as well as a nautral herding dog. He amazes me still how he just seems to know what to do and listens to our comands like a pro. :o)
We make fries and hashbrowns more than we do chips, but as a treat they are fun. Kind of like homemade fried donuts, good but also a treat only made every so often( due to pounds added*wink*)

They look wonderful! I like to make mine in coconut oil.. then I feel like we're eating healthy fried food! :-)
I had an ex co-worker who lived near a potato chip plant as a boy. He told me how much better they taste fresh, compared to being in a bag for who knows how long.

We love our " boys", the red tri is, Casino and the black and white Border Collie is Tuffy. Thanks for noticing them, we think they are very special.:o)

I have a hand slicer and I set it pretty thin(1/4" thick), you can do thicker, they just take longer to get crisp.
The oil we use is virgin olive oil, but recently in the comments above it was shared that coconut oil works well too. I'm going to try that next time.
Typically our mainstay oils are virgin olive or grapeseed, although we do use coconut and pig lard( we render ourselves)
If you like potato chips, once you've had your own, you won't go back*wink* Homemade fried are the same, and we leave the skins on all potato dishes, unless it's for mashed then we peel them and save the skins. The skins we stir up with a little oil and add some seasoning and bake in the oven, another good treat!

I haven't been really good at following blogs, where are you? Hope you do give them a try, you won't go back to store bought. They keep in a ziplock bag in the frig for several days :o)
